Garlic & anchovy spaghetti with breadcrumbs

Garlic & anchovy spaghetti with breadcrumbs

This is the easiest pantry staple pasta with more garlic and anchovies than you'd care to share (but no one has to know)! You can find the video of me making this deliciously simple pasta on my KATVEL COOKS Instagram

PREPARATION TIME: 5 minutes COOKING TIME: 10 minutes SERVES: 2 people

    • 200g pasta
    • 10 cloves of garlic
    • 8 anchovy fillets
    • 3/4 tsp chilli flakes
    • 1/2 cup chopped parsley
    • 1/3 cup breadcrumbs
    • 1/4 cup Golden Groves Extra Virgin olive oil

  1. Bring a medium pot of water to boil, making sure to generously salt the water.
  2. Whilst you wait for your water to boil, separate parsley leaves from stems. Finely chop parsley leaves and stems, making sure to keep the leaves and stems separate.
  3. Next, finely chop your cloves of garlic.
  4. Then take your breadcrumbs and brown in a pan until lovely and golden.
  5. Once your water has boiled, place your spaghetti in the salted water.
  6. Whilst you wait for the spaghetti to cook, add olive oil to a pan.
  7. Add your chopped garlic, parsley stems, chilli flakes and anchovy fillets to your pan.
  8. Sauté and stir your ingredients until the anchovies have dissolved and garlic is golden.
  9. Once your pasta is al dente, drain the water from your pot. Whilst draining your pasta, make sure you reserve one cup of pasta water which you will add to your pasta later.
  10. Add your pasta and half a cup of pasta water to the pan.
  11. Stir your pasta to form a creamy sauce.
  12. Add parsley leaves and stir through your pasta.
  13. Plate up your pasta on a platter and sprinkle the golden breadcrumbs on top.

Bon Appetit!
